Oven Fried Chicken Strips

As much as we love fried chicken and mashed potatoes at KFC, tonight’s healthier alternative was an excellent substitute. Now “fried” is a bit deceptive as these are fully baked, but taste almost identical to fried chicken strips.
Ingredients:

12oz boneless skinless chicken breast cut into strips
1/4 cup flour (whole grain flour would be better but I used what I had)
1 1/2 cups bran flakes
2 tsp. pepper
2 tsp. crushed red peppers
1 tsp. salt
2 egg whites (egg beaters work as well)
Non stick cooking spray



Directions:

Preheat oven to 350 degrees Cover a cooking sheet with aluminum and spray with non stick cooking spray Crush the bran flakes or blend in a food processor Combine flour, salt, pepper, crushed red peppers, and crushed bran flakes Coat chicken strips on both sides in egg whites, then place into seasoning mix coating again on both sides Place all of the coated strips on a prepared cooking sheet and lightly spray with non stick cooking spray Bake uncovered for ten minutes, then remove from oven, flip over, spray once again lightly, and return to the oven for an additional 10-15 minutes. Serve with bbq sauce for dipping (optional).
